Creating a USDA-Compliant Nutritional Label for Sliced Dry Cured Ham

Hi everyone,

i'm trying to create nutritional labels under USDA regulation for dry cured ham, sliced.

 

Where can i find data to use as nutrients (calories, fat, protein ecc) ? I know "food data central" but are those data accepted by usda?

Otherwise, can I use techical data sheet provided by the supplier? What if I have different suppliers who provide for dry cured ham?

 

Can anyone explain to me how this works in the U.S under USDA regulation?

 

My process involve only slicing.
