CCP determination, CFIA, Codex, or PCQI questions
Hi everyone,
I am a bit confused as far as the proper questions for CCP determination in Canada. I have been questioned by an auditor before as to why I do not have the exact wording from the CFIA template form 8 from the CFIA website for the CCP determination questions. The Codex decision tree has some variations. Now the CFIA website reads that the information is a guideline and you can use other variations. Can anyone speak from experience, what CCP determination questions check all the boxes and will be SQF audit friendly?
From SQF:
2.4.3.1 A food safety plan shall be prepared in accordance with the twelve steps identified in the Codex Alimentarius Commission HACCP guidelines. The food safety plan shall be effectively implemented and maintained and shall outline how the site controls and assures food safety of the products or product groups included in the scope of the SQF certification and their associated processes. More than one HACCP food safety plan may be required to cover all products included in the scope of certification.
2.4.3.17 Where food safety regulations in the country of production and destination (if known) prescribe a food safety control methodology other than the Codex Alimentarius Commission HACCP guidelines, the food safety team shall implement food safety plans that meet both Codex and food regulatory requirements.
So not being Canadian, if CFIA guidance allows you to use a recognized HACCP guideline such as Codex, I would run with it as it is the preferred method under SQF.

The CFIA website lists 3 different examples of CCP determination questions, each one would answer yes or no differently, very confusing, but there is a reference and link to Codex, we just had a meeting and went through the examples and decided to go with Codex.

The CFIA decision tree appears to be a slightly modified version of the old CODEX decision tree. See below.

Given the SQF Food Safety Code refers to Codex Alimentarius Commission HACCP guidelines, that is what I would use. There is a table or a decision tree to use.
