Whats So Difficult About Haccp?

Hello Saferpakers,
I have two questions.
1. Whats the most difficult part that you feel about developing a HACCP Program?
I know it is important to monitor the CCPs and take the corrective actions as planned in case there is a deviation. Apart from all these, I am sure they are certain areas in the program that must have really bugged you mad.
2. Which specific section holds the honour of having the most number of pages in the manual hence the importance.

For me it's actually the hazard analysis and determining the CCP's I find most difficult. You would expect using a numerical method to come up with a Risk rating for the hazard (E.g. Severity X Likelihood = Risk Rating) would be objective and relatively straightforward. However, I find the process very subjective. I suppose it's like any other team based decision making process, you have to come up with a sensible consensus. It's probably a good idea to have an odd number of people on your HACCP team as well.

Remember! We do not use numerical analysis anymore..........that was when Mathematicians were involved in HACCP programs. Now, the solicitors are involved and so it has more or less been decided that it is now timely to justify your findings instead.....but the scientists insist that you have to validate your findings with scientific validations.
Boy! Just wait till George Bxxh gets his hands into this..........he may just call in the CIA
To me, the most difficult part of a HACCP program is to convince the "scientists" - validations of critical controls scientifically.
In terms of the most number of pages in the manual, it has to be Product Recall.
