Recommended Format for OPRP

For HACCP Plan Summary, we need to list down the item as below:

§ CCP number

§ Significant hazard(s)

§ Critical limit

§ Monitoring (What, how, frequency, who)

§ Corrective action(s)

§ Verification

§ Record(s)



So, is there any recommended format for OPRP?

Yes, it's the one for which the auditor has no negative comments.

ISO22k section 7.5 provides an outline of a format for documenting the OPRPs.
For each programme you need to document;
1. Food safety hazard(s) to be controlled by the programme(s)
2. Control measure(s)
3. Monitoring procedures that demonstrate that the OPRPs are implemented
4. Corrections and corrective actions to be taken if monitoring shows that the OPRPs are not in control
5. Responsibilities
6. Authorities
7. Records of monitoring

It seems very similar to a HACCP plan/summary except the requirement of establishing a critical limit for monitoring the CCP.
There may be one programme which can control more than one food safety hazards.
