How To Do A Combination At Few Factories In One Haccp Plan

Dear all:

thanks all of you 1st!
ok..now if a small medium factory need set up a HACCP plan..the plant is separate but under a same management.
they have few lines, one is bread making, cake making and so on.
in this case, can i have a same system manual & PRP then combine all process flow in a HACCP plan?then whole HACCP document is valit to all plant they have, can I?

or any opinion from all of you??

Welcome to the forum

If I understand correctly, you have a factory with various production lines working under the same roof and sharing the same basic facilities.

In this case, the general hygiene etc will presumably hv some common PRPs (eg water supplies) although each process will require to be evaluated for HACCP as per its own specific requirements (for example low/high level risk products if present usually require physical separation / specific hygiene considerations etc.)
Groups of “equivalent” products can often be included in one plan if following the same process / having similar hazards.
The collection of hazard plans can then be combined into one manual as you suggest.

No doubt other people may hv additional ideas / suggestions.

I have had a generic HACCP plan which covers several production lines; however, these were all producing similar products and the products could be swapped from line to line, e.g. ready meals.

Personally, I would do a generic plan for each type of product. I would say bread making will be too different from cake making to have together in the same plan. You may find a lot of the decision making is similar, however, the risks will be different for some of the steps so you will probably get yourself in a muddle - easier to do one for each 'type'.

Make sure you cover every product you make. It's a good idea to challenge it once you're done!
