Documentation & Records Required by ISO 22000

Can anyone help me to Know How can I establish documentation & Records of
ISO 22000 in Hotel ( Is there specific form), and how many records and documents that reqiured in ISO 22000 ( mintion them please).

Have you got a copy of ISO 22000 standard?
Do you have a HACCP system already?
Do you have a food safety policy?
Do you have a quality management system already?
Do you have documented procedures in place already?
Do you use any forms or checklists already?

Let us know what you have already and we can work on that.

Thank you Mr Simon , I already have got Acopy of ISO 22000 Standard
But I don't have HACCP system , food safety policy , a quality management system ,
documented procedures in place and I don't use any forms or checklists already.
Please help me to establish those myself specially Documentation & Records

One more question.

I presume from yr above answer that you do not at the moment hv any technical backup, eg people with expertise on the items you list such as HACCP (including yourself). Is that correct ?

As per clausul 4.2.1. ISO 22000 The FSMS Documentation shall include :
1. Documented statemets of food safety policy and related objective
2. Documented procedures and records required by ISO 22K, ISO 22 K Specifically
requires document procedure for :
a. Control of Document.
b. Emergency preparedness and response
c. Internal Audit
d. Corrections
e. Corrective actions
f. Withdrawl.

That sminimal requirements for Document, plus Documen needed by the organisation to ensure the effective development, implementation nad up dating FSMS..

And, as you imply, only minimal requirements are discussed, there is probably no maximum.

and there is inconvenient statement in last line "implementation nad up dating FSMS.." thats i mean "AND"....i Hope doesn't make the people confuse...

but In general , I need to know how many records and documents
that reqiured in ISO 22000?
for example I know that ISO 9001 Requires 6 document and 21 records
but ISO 22000 Requires .....document and ......records.

you can find out the documents and records required from the ISO 22000 standard.
In the standard wherever indicated '... documented procedure shall be established...' means written procedures are required.

'....shall maintain records..' means mandatory records are required

Possibly ISO apples and oranges ?

Seems to me that as per 4.2.1, "Document" is not restricted to "procedure".

Nonetheless, out of interest, I did a quick visual scan for the phrase “shall ....documented procedure” and found –

4.2.1.b (introductory)

4.2.2 (1 item)
4.2.3 (1 item)
7.5 .c (1 item)
7.6.5 (>=1 item)
7.10.1.a/b ( >= 1 item)
7.10.2 (>= 1 item)
7.10.4.b (>= 1 item)
8.4.1 (1 item, thks Biss)

(maybe a few more i missed?)

Have to say there are some, improbable, non-appearances IMO, eg no requirement for a documented procedure for emergency situations (5.7)!!.

I could only find 1 reference in the main HACCP section, although the standard does state that the HACCP plan shall be “documented.” (7.6.1) which is nice to see . Perhaps this also mandates documenting procedures like SOPs.

In contrast, the word “documented” appears many, many, times.

There is an extended comment on the documentation requirements in ISO 22004 (4.2) although the word "should" seems to occur everywhere. My guess is that "should" = 90% "shall"

I ran out of energy for "shall ...records".

4.2.1 & 7.5 does not require documented procedure.

what about 8.4.1 ?

No documented procedure is required for 5.7. No need to write a procedure for 'how to prepare a emergency prepardness plan'. as per the clause only emergency prepardness plan is required

if the standard indicated 'shall maintain documented procedure' in the 5.7, then we have to prepare a procedure on how to prepare a emergency plan.

Perhaps we hv different versions of the standard

my 5.7 has no reference to a "plan", only to ".....establish, implement and maintain procedures....."

It is also possible that we are using somewhat different interpretations of the word "procedure". I appreciate the original post is referring to the ISO 9000 Quality Procedure with it's layered sub-procedures. I choose to be a little more expansive as per the text in 5.7 above.

My 7.5 contains "the operational prps shall be documented and shall include .........monitoring procedures......." I agree to having used a little extrapolation. Blame it on ISO again

Yes, I agree, no explicit number in 4.2.1, "b" is sort of introductory?. Hv amended above list.

added - @ mo_omda, I strongly suggest you also study the para. 4.2 referred above in iso 22004 which amplifies ISO 22000

we are refering to the same standard.

'... shall establish, implement and maintain procedures to manage potential emergency situations ...'

here no 'documented procedure' there in the standard only 'procedure ' - so it is not mandatory to prepare a documented procedure. but you can have a emrgency plan to manage the emergency situation

The first one contains a quite nice sample excel worksheet focussed on the internal audit of “ISO 22000 "documents" and records” but please note that it is commented in the thread to be not yet totally comprehensive (due to it being initially constructed from a combination of HACCP and ISO 9001).

if the crisis management plan explains, how to manage the food safety related issues during the emergency, then it is enough

Documenting processes provides control and consistency of how processes are performed. You will need to document procedures called out by the standard as well as those required to ensure control of other processes in your FSMS. This means that your FSMS will have more documented procedures than just those specifically named in the standard but these procedures will be useful documents. They will ensure that processes are being done as management planned and approved. Conversely, they will ensure that management knows how processes are being performed. Documented procedures will also make sure that different people perform the process the same way. You will not be writing the procedure and putting it in a book on the shelf to collect dust, you will be building a system where documented procedures and work instructions will become an important and integral part of your system.

Good points Aidy, thanks for your input. The operational implementation of a system as planned is where systems often fail or are less effective (because it's the hard bit - and involves the masses).
