Pickled Eggs

We have a customer who makes pickled eggs, using malt vinegar and eggs.

Recently the jars have started to go cloudy, with a heavy white sediment settling on the bottom.

He buys a strong vinegar from us and waters it down to the right acidity, before adding the hard boiled eggs. After a couple of days, the sediment starts to appear, so he leaves them for a week or so, then pours the vinegar away, washes the eggs again, and then puts them back in the jars with fresh vinegar. A small amount of sediment then appears, but not as much as previously.

The water supply to the unit is very hard, so we have suggested trying a few using boiled water, or water from a descaler unit.

This might help, but he also pickles other products, such as onions, mushrooms and beetroot with no problems.

Anybody got any ideas?

I used to do a bit of duck egg pickling myself.......that was in my bachelor days.

Think the problem with the cloudy sedimention come from the "added water". Try not to add water to dilute
vinegar and see if result improves.

Maybe egg-proteins are coagulating.
What about the pH of the final water-vinegar mixture ?
Has it been changed recently ?
Apparently nothing has changed. He even bought a competitors vinegar that didn't need watering down, and the same thing happened!

He must have washed his eggs with water to clean them up but could have put them in for pickling immediately or when egs are not sufficiently dried.

If so, try drying the eggs thoroughly before immersion.

I've been watching this intereggsting topic very closely; I have nothing to offer, but would like to hear the outcome.

BTW what do pickled eggs taste like?

If you have NOT tried this "golden eggs" before.......you simply have no idea what you are missing! My preference is duck eggs

I tried my first pickled egg when I went to visit this customer last week.

They were surprisingly good!!

He also introduced me to pickled mushrooms, they were simply button mushrooms, cooked and put in Malt vinegar, very much the same as the eggs. These were really good!!

I have now made my pickled eggs, and am just waiting to see if anything happens. I'll keep you informed!!

The sell pickled eggs in the chip shop near home; I must try one next time I go there. I treat myself to fish and chips once every 6 weeks or so and it's nearly time.

How would one go about eating a pickled egg? Whole, nibbles, white first, yolk first? With my mouth I'd probably be best to go for the whole.

I have taste tested that many eggs I now look like this <--- !!
