I have no idea either but with any HACCP process, I would suggest starting on the flow diagram on big pieces of paper (flipchart paper for example) in theory with a cross functional team (which must include an engineer) then take this starting point and walk with it around the plant with the team. The reason I suggest doing it this way is there will be quite a lot you know without looking but if you go to the factory with a blank piece of paper you risk spending all your time writing rather than looking. I find it's easier to tweak on the move than start from scratch.
