Hello everybody, does someone has a generic model to GMP or HACCP implementation in an egg production factory? I would really apreciate it
There are differences of opinions regarding precise interpretation of HACCP in this area.

Very nice document. I observe the contents all refer to heat treated egg items, eg Salmonella should not be detectable. Strangely, couldn't see any details / discussion over pasteurisation requirements (just a footnote). Trade Secret ?
I'm not sure myself exactly what the original poster was actually looking for ?. Eggs or processed eggs ? Guillenclau ??
