HACCP Training Simplified

Greetings IFSQN Viewers,

Recently I updated HACCP training presentation for all (working in food or food related organizations).

Made simple with clear understading of english, attractive slides and usage of fresh photos.

Hi Abdul,

The training is good. Also nice website.
The only improvements I can think of is pictures of things that have went wrong because of poor implemented HACCP-plan. Fo example the mouse that Simon used as pichture. Also I miss the hazard: allergens.

I also liked your presentation on 5S.

I've been told that fungal mycotoxin is one of chemical hazard, not biological hazard.
and when I saw Abdul's presentation, fungal mycotoxin is one of biological hazard
which one is the correct answer?

Both can be correct. The mycotoxin is a chemical but produced by a biological agent. Personally I would consider it as a biological hazard as my controls are likely to be similar to controlling microbiological agents (ie I'd prevent the mould rather than try and prevent or get rid of the toxin.)

Usually you would consider the biological aspects (to prevent toxin production) within your control and the toxin chemical element outside of your control so from supplier controls etc.

Fungal mycotoxin is classed as biological hazard as it is the organisms that produce the toxins. It is similar to toxins produced by some of the microorganisms and yet we do not class them as chemical hazards e.g. eneterotoxins from Coagulase Positive Staphylococcus. They are classed as biological (microbiological) hazards!!

I think mycotoxins are chemical hazard, but associated with a biological hazard. Is the same thing when you talk about insects, rodents, etc. they are a physical hazard, but of course associated with a biological hazard.
