I’m not aware of the requirements as I’m not a user of ISO2200, but I think it’s a very good question irrespective of the standard.

For a start there must be an open and honest culture where employees feel safe to report issues without any blame or recriminations. I suppose everything that goes into developing that culture cannot be simply written into procedures, however, there will be a myriad of policies and procedures that impact on this along with the values and actions of employees at all levels.

Part of existing procedure for monitoring CCP’s, Quality Checking, inspection etc. should include a provision for the action to take if something goes wrong and that goes right throughout the process from incoming checks right through to despatch every department should have their food safety and quality control plan. In addition if you have policies such as security and defense, pest control etc. everyone should be aware of what to be aware of, what could be a problem and what to do if they see, hear or smell something strange. All of that is backed up by training, communication, supervision and involvement.

No document template, but just a few ideas. Build it into every process and procedure and you will be able to demonstrate compliance everywhere.

Simon
