Do I have to have a HACCP for each product?

Hi everyone, 

 

We are currently launching a new product and need to incorporate it in my Quality system and HACCP.

I have always dealt with one product and don't know where to start ( product in process in the next three weeks and BRC approaching in a couple of months ).

 

Do I have to have a HACCP for each product? both products are fresh fruit.

The answer typically depends on the similarity between the respective process flowchart / CCPs for the 2 fruits

 

If identical/similar, it may be possible to use the same basic haccp plan.

I agree with Charles. As long as the processes are similar, you can use the same plan. Also, you should certainly add any new ingredients to your ingredient hazard analysis. If there are any CCP changes noted for the new product, those should be included in your master plan (for example, metal detector test cards of different sensitivities). If the processes are similar, but there are additional processing steps for this new product, any new steps should be listed in your process hazard analysis (you can designate those steps as for the new product only).
