Hello everyone ... I need help with identifying the most common microbiological testing conducted for ground coffee and instant coffee as RTE product as well as the regulatory limits for US market. I found some information on the web, but almost everything is related to Ochratoxin A and that is about all.

I appreciate your knowledge and experience!

Hi Loredana,

The most common micro-testing is usually revealed by the product specification / any regulatory factors. US regulatory no idea - who has jurisdiction ? FDA ?

Do you have a detailed product spec. already / can post ? (to save time looking for one  )

Hello Charles,

The finished product is under FDA jurisdiction. Unfortunately I do not have a product specification that I can relate to or that can help guide me through the testing requirements or just industry practices. Hence, the regulation researched does not provide almost any answers. All I can find is in regards to green coffee; I took that in the account for pesticides residues and Ochratoxin A, but again there is no testing limit to relate to.

Hi Loredana,

Hi Lorendana,

]

As you say, ochratoxin A is a popular hazard.

I can add a little bit, though not for USA –

(1) Indonesia (draft)

instant coffee

TPC  -      n = 5, c = 2, m = 10^3 cfu/g and M = 10^5 cfu/g

Mould -    n = 5, c = 2, m = 10^2 cfu/g and M = 10^3 cfu/g

(2) Uganda standard

instant coffee

There is also a “coffee thread” on this forum –

Hi Charles,

I appreciate the information you sent me. Actually it helps even if only as guideline. I found similar information from India, Sri Lanka ... I hoped that maybe some members from US can share their experience :)
