Please review my HACCP Plan

Attcach a  HACCP plan, asking if possible I can get your help to change or add

Call me old fashioned , but...... It is my understanding that each step of the process must be riak assessed for the following hazards:

Biological - Pathogen, growth

              -

 

 

When I was at the advanced HACCP training course a couple of years ago they gave us the format attached.

Feck... I poster that and didn't mean to

 

Biological - Pathogen contamination

                Pathogen growth

                Pathogen survival

 

Chemical - Oils or greases from equipment

                 Cleaning chemical residues

                Antibiotics.

 

Physical -  People, premises, plant, Pests, packaging

 

Allergens - any one of the 13 listed in EU.

Hi Sarah,

 

I agree with Trubert. You should have Biological, Chemical, and Physical hazards listed for each step; even if there are none. You do have a very thorough analysis though.

 

So as an example, in your shipping step according to the excel file:

 

  • Biological - Pests, Microbial Growth (Yeast & Mold) from degraded materials and/or improper storage.
  • Chemical - None
  • Physical - Damage to the Container (foreign substance introduced to the material).

Dear,

 

HACCP not means just use a fixed  format and work as fixed way. For applying HACCP for any product the simplest ways are as follow-

 

1.Just collect the scientific knowledge about the product.

2.Do risk assessment on each steps.

3.Control measure for each risk.

4.Than categorize the control measures as ccp or Oprp.

 

And format is not important for HACCP.

Actually i thought the basic layout is getting there ( but maybe depending on the Standard)  but the Risk Assessment is confused.

Right or wrong, we added allergens along with the Biological, chemical and physical.

Auditors seem to like the idea.

Here is a quick template shot of what we use for our risks.  We do more distribution and third party logistics so it is not by ingredient or anything but you can get the basic idea from this.  Hope it helps.

I guess  "FSRAM" = "FS risk assessment matrix"  but how to  interpret the data in risk eval. columns (eg "2...D...12") ??

I am not sure which risk asseement matrix did Brendan used to interprete the hazard severity and likelihood, but I am using the FS risk assessment matrix from this link

thks for input.

 

As i understand, cells above the (safety) line >  CCPs. Far too rigid IMO.

 

I also don't agree with the use of "generic" recall/complaint titles as appropriate for safety severities.

 

However risk matrices are indisputably subjective. :smile:
