HACCP process flow chart

Hello,

 

I'm new to this HACCP process flow chart and integrating it into Food Safety Risk Analysis matrix and worksheet.  There is a plan in process but how do you incorporate a new machine into the the plan and understand it.

I am aware of Haccp what it means and intel but there is a part of this puzzle I cannot connect.

Sorry but i don't quite understand what your question is ?

 

I guess you are talking about the Hazard Analysis but please clarify/be more specific about what you want to achieve, eg give some details about the product/process/"machine".

 

PS - Welcome to the Forum ! :welcome:

Your process flow is your guide to the rest of your HACCP plan.  Make sure whatever and wherever the new equipment is in your process flow you make your flow diagram accurate to that new piece of equipment.

 

If it is a new step in the process, or an alternate step then it needs to be added.  If it is replacing a current piece of equipment then the flow diagram likely remains the same unless you name equipment specifically on the diagram.  In this case, you would conduct a hazard analysis of the piece of equipment focusing on sanitation, maintenance, and potential foreign material.

Update your process flowchart to show where the new machine is located.  If it is replacing an old machine, you can add a note, color, etc. to show new machine.

 

Update your process risk analysis to show potential risks that the new machine would have and the control measures to mitigate those risks.

 

Create any new procedures or instructions if the new machine is significantly different than your other equipment.

 

Give and record training for the new machine, including food safety procedures.
