Written procedures/SOPs for Sanitary Food Transportation of Human Food

Hi All:

I am developing Sanitary Food Transportation of Human Foods procedures. The company that I am working for has our own trucks to deliver products locally and also contract with some carriers to pick up products from domestic and Canada suppliers and drop off products for interstate customers. Products are mainly frozen and fresh fish ones.

Sanitary Food Transportation of Human Foods Rule requires shipper (my company) to develop  written procedures for carriers etc..Can anyone provide (1) what procedures/SOP to be developed to meet this Rule and (2) corresponding generic procedures/SOPs for reference.

Not my area but apparently -

 

The FDA FSMA Food Safety Technical Assistance Network is already operational to provide a central source of information to support industry understanding and implementation of FSMA. Questions submitted online or by mail will be answered by information specialists or subject matter experts. 

 

¢ The FDA plans to develop an online course that would meet the training requirements for this rule. The agency anticipates this course will be available before the first compliance dates go into effect.

 

 ¢ The agency will also issue guidance to assist industry in complying with the final rule.

 

 

 

Primary responsibility for determining appropriate transportation operations now rests with the shipper, who may rely on contractual agreements to assign some of these responsibilities to other parties.

•   Shippers must develop and implement written procedures to ensure that equipment and vehicles are in appropriate sanitary condition.
•   Shippers of food transported in bulk must develop and implement written procedures to ensure that a previous cargo does not make food unsafe.
•   And shippers of food that require temperature control for safety must also develop and implement written procedures to ensure that food is transported under adequate temperature control.

I think maybe only few facilities are doing procedure aligned with the FSMA Sanitary Transport Rule right now. I would suggest you write what are you doing right now and check if it is aligned with the FSMS Sanitary Transport Rule. Make it simple as long as the elements of four W's and H are there.

If anyone out there has policy templates already in place I have yet to find any try as I might. It would be a huge time and money saver; however, there is one company out there who offers a full solution - the program, the policies, the documents et cetera

This is a checklist put forward by University of Iowa. Pages 39-54 are the relevant ones for Transportation. Hope this helps...or at least gets you closer to your goal.

FDA has a dedicated training module for the sanitary transport rule. Take the information on the slides and turn it into a policy SOP!

I have taken the IronApple Training, the CarriersEdge Training and the FDA training courses to compare the quality for our clients. The FDA training is not real great. It's not something that could be used to easily create a detailed policy or procedure.

I agree - was not impressed by the FDA training, but we were on a time crunch so we made our employees go through it anyway.  We already had a lot of what FSMA requires in place. I found the FDA guidance doc more helpful than anything else.

Has anyone actually had an inspection by the FDA on this yet that could share a little bit of what they are looking for?

I find the guidance document to be good. I did like the Iowa University check list as it took the document, created a checklist and in blue font below each item had a short explanation in layman's terms as to what was needed. For the Transportation piece, it begins on page 40.
