Need documented procedures for all PRP's?

Excuse my ignorance but could I ask, do certifying auditors generally expect to see documented procedures for each of prerequisite programmes detailed in sections in ISO2002-1. e.g construction & layout of buildings right through to 18.2 access controls??

I am just checking in to see if any of you can help with my question above from 20 November. We are currently upgrading from ISO22000 to FSSSC22000. I have completed a gap and we are working through some remedials. We already have documented procedures in place for issues such as pest control and broken glass. My question is, do we need to document procedures for all of the prerequisite programmes detailed in sections in ISO2002-1. e.g construction & layout of buildings right through to 18.2 access controls??
Your thoughts would be appreciated.

As I have it every section needs to be covered in a procedure or other document.
That being said, we don't have a procedure for each specific part. For instance access controls would fall under the procedure for Food defense.
It is acceptable to have one procedure cover more than one part of the standard.

Thanks Jaco - I've more work to do then. I was hoping we could just demonstrate that good practices were in place without having to have a documented procedure for all
