Hello,

We are producing donuts for TESCO and according to their requirements we have to conduct a cleaning validation . For their standard it must be three successful validations in different cycles (for each type of risk) before verification tests are implemented

and  Test methods must be quantitative, not qualitative.

What's the procedure to follow for all the risks (allergen, micro, physical, chemical and pests) to be sure that we comply with the standard?

How can share with me some procedures to follow

Thank you

Hi ;)

Cleaning validation :

Allergens : Do you have allergens claims ? for example : Free from milk etc ?

If so, then you will have to proof that your production line is free from milk during changeover from allergen to non-allergenic product.

- Three different production lines shall be swabbed before changeover (ensure that products with milk were there)

- After cleaning, these three lines shall be swabbed again before changeover.

- Use accredited laboratory for swabs tests, only laboratory testing will be quantitative.

Micro : TVC, Entero, Listeria - I don't know what you produce and Listeria is either detected or non detected.

- again you can swab three production lines before changeover and then after cleaning

Physical : do you have a metal detector on site? / sieving process / optical sorter?

Chemical : what type of chemicals do you have on site?

Pests : do you have a pest control on site?

Hello,

This is my answers :

Allergens : Do you have allergens claims ? for example : Free from milk etc ? we add in our labels that some traces of allergens could be present (almonds, nuts..)

Physical: we have a metal detector at the end of the packaging line.

Chemical: lubricants and cleaning products

Pests: we have an external provider

Do we have to do microbiological tests before and after cleaning?

Thank you

as far as I remember you should have Tesco requirements for suppliers 60031-Cleaning validation and verification. There is a step by step guidance for

validation and verification of cleaning. If you don`t you need to approach Tesco technical manager or check their website.

By the way you should only consider hazards like : micro, chemical, allergens and species (meat)
