Query on hazards in sesame products
Dear Networks,
I am a PhD student focusing on safety management and HACCP plan Development in the traditional set up of oil processing in rural of Ethiopia. I am addreesing all the HACCP procedures and my reference will be the Codex, specifically sesame oil. I need your help with the possible hazards associated to sesame and sesame based products and codex standards. Looking your constractive response.

Well about constructing a risk assessment for sesame oil , it is better to do your own according to your industry , just keep in mind the five types of hazards:
1. Biological.
2. Chemical.
3. Physical.
4. Allergen.
5. Radiology (if present).
I suggest for doing Risk assessment you can use FMEA template (Failure Mode and Effect Analysis) , it will be more detailed but it will be strength point.

Is there a specific finished product ?
Is a specific food safety standard involved, eg BRC ?
The haccp hazards will relate to the raw material / process / process environment.
Please provide some details.
Also note: sesame is a known allergen in some countries so the required labeling may be different depending on where you are shipping this product to

I have same query. Our organization is certified under ISO 22000:2005 standard. We have a new product which is SESAME OIL and there is a need to update our HACCP. I have some troubles regarding identification of potential hazard because we purchase the sesame oil and sell to our customer, no further processing is involve.
In relation to food chain, our organization is on distribution side. We purchase sesame oil, we store, then we deliver it to our customer. Can you give me idea regarding the requirement of sesame oil (e.g. reference regulation, hazard associated with this product etc.)

As per product spec from the supplier, it is not clearly declared whether it's a refined or not.
We have no quality specification set, however, our customer have set of quality requirements which we used in choosing suppliers.
Some possible safety-related hazards -
Salmonella
aflatoxins
pesticides
Hazardous external materials (Dust, soil, straws etc.)
Heavy Metals
allergenicity

Salmonella should be absent, ie not detectable.
Allergen involves a labelling declaration.
The others relate to designation of product / location of usage / purchase contract,etc
