Food Safety Team sign off on new facility

Hello,

I am the Quality Systems Mgr. at a winery. We have been constructing a new building for our bottling, lab and warehouse operations. The current operations and most of the equipment will move into the new building when complete.

How soon after/before occupancy does the food safety team need to  review the process and sign off? None of the actual process will change - its just happening in a different building.

Before any full scale production occurs. You will still need to do a food safety system review to ensure that no contamination occurs during the moving process, and that the new location does not pose any new food safety risks.

You cannot sign off UNTIL production begins. As PP mentioned, you need a new process flow diagram to assess any new risks, and you cannot do that until installation is complete.

 

and you need to ensure that sanitation has done at least 3 full cleans prior to using any of the equipment
