Codex decision tree example

Hello every one My name is Ramiro this task was assigned to me:

2.7.3 – Ramiro – create an example

Codex decision tree has been on file, however, there was no documented evidence that the decision tree was used for arriving at or determining of CCPs identified

Our CCP's are Metal Detection, Oil Roasting, and PPO. We process walnuts, almonds, and cashew.

I was wondering if anyone can give me an example or help me out with a outline I can use?

What is PPO ?

There are 2 question.answer "patterns" from the Original Codex decision tree which result in confirming a CCP..

Is that what you seek ?

Or do you want an explanation of how the appropriate patterns are actually derived for yr 3 CCPs. This typically requires a flowchart/hazard analysis ?

PS - How were the 3 CCPs currently determined ? Direct from the hazard analysis/Risk assessment ?

I think what they are asking is how did we determine that for example the step in our flow char and hazard analysis where we us a metal detector is a actual CCP..

We have our BRC audit on Sep 17, So I am going to be asking a lot of questions, and I have very little experience so appreciate any and all help that I can get.

To answer your other question PPO is our pasteurization step that is one of our CCP's

Re - ^^^ red - Probably not if that typifies the total haccp plan for justifying your CCPs.

BRC typically require to see a detailed hazard analysis (ie clause 2.7.2), etc (IIRC, use of the Codex Tree typically requires answers to 4 questions)

You maybe need to study the HACCP-related clauses in the BRC Food Code, (BRC8) plus some nut roasting FS texts + Use of Codex Tree.

PS - files for the last 2 items in previous paragraph are available on this forum. Examples of use of the Codex Tree also exist. Can find/give you the Post links if you wish ?

sm3 - GMA - Industry_Handbook_for_Safe_Processing_of_Nuts_2010.pdf   1.52MB   55 downloads

sm4 - Codex Tree terminologies.pdf   366.78KB   112 downloads

sm1 uses the original Codex Tree to determine CCPs. It does not show the "working" which determined whether a hazard was significant or not.

sm2 is aded for comparison to sm1. It uses the Campden Tree which is a later version of Codex Tree and adds one more initial question so as to simplify the work via PRPs. It includes the "working" to determine which hazards were considered significant hazards (the score selected for a significant hazard seems not given and was >=6).

sm3 is afaik a standard reference text on haccp for nut roasting.

sm4 interprets the questions in Codex Tree (Qu3 is the most "obscure"  IMO).

FSA (UK) offer a quite nice tutorial presentation for developing a haccp plan (including mention of both Codex/Campden Trees) -.
