Good Examples of Taste Panel Systems

Morning Everyone, we are currently setting up our taste panel programme on site, and wondered if anyone had good examples of a system that works well. Really I need it to be 'snappy' and we are looking at holding them daily, due to our customer requirements and what we do.

Are you referring to organoleptic testing? Sitting down and doing a sensory evaluation of the product to ensure it meets specific criteria? 

The initial stage is to form a sensory evaluation panelist composed of at least 10 people from different departments of your company. Part of the selection process is to check their sensory evaluation skills specially their sensitivity of smelling and tasting ( different degrees of bitter, sweet, sour, salty, umami). Rate their skills and the person who can easily detect different scale of taste can be your panelist. These panelists are being called whenever you have to conduct your sensory evaluation.

 

Your sensory evaluation questionnaire will be dependent on your what goals you want to achieve. Determine what information you needed to get good results when you conduct your sensory evaluation. Hedonic scale is the most common tool used in sensory evaluation.

Training on the proper methods of sensory evaluation must be considered before using your panelists.

As per previous Post, the program implemented depends on what you actually wish to do, ie What is the objective of the program ? Some typical possibilities are illustrated in first 2 attachments below.

 

Further, just as an example of one type of "objective"  I attach a sample of a basic implementation of the popular triangle test.
