Need help with Building Structure

The company I am at is working towards a GMP certification. We currently are having an issue within our dish room. It is located away from production. It is a room within a larger room that has an exterior door and a door leading into where we store packaging materials. We pressure wash racks in this room and at the moment it is hard to continuously be cleaning because the pressure washer causes a mist buildup in the room. The plant manager is considering removal of the ceiling within the dish room to help with circulation. Does anyone have any insight if this even possible to do?

The room should have a HVAC with Dryer accessory or build in.
