Online Environmental Management Program Training
Hello, is there any online trainings yall would recommend on Environmental training in regards to the food industry, what to swab for, how many swabs, how to make the program, just a dive on all of that. Ways to kill pathogens, cleaning, roasting/baking, kill steps (pretty much all the same thing just different terms at different parts). I have a lot of stuff in place and know a lot of the basics but would love to learn it from an actual person and not from my experience if that makes sense.

So right now we do listeria swabs and salmonella swabs.. for pre-ops we also do protein swabs because we work with allergens (5 of them)
we are a nut roasting facility, dry environment, like I said I have things in place and have a basic understanding so im just trying to learn more :)

North Carolina State University has an excellent online course that lays down the basics.
It's focused more on dairy manufacturing and costs a couple hundred dollars or so.

Eurofins has an amazing EMP class!
Usually it's an in-person class, but I just checked their website and found that it is being offered virtually. One downside, Eurofins classes tend to be pricey. My favorite part of the class is that they use real world examples of facilities they've been to and issues they've encountered, then subsequently resolved. You also get a certificate of completion for 16 training hours.

No but not super crazy priced.
NAMI (North American Meat Institute) offers an Advanced Listeria Intervention and Control Workshop that is wonderful. It is geared towards the meat industry and Listeria but when I attended a few years back I met folks from lettuce and salad manufactures as well as dairy and salad dressing manufacturers. It is traditionally only offered twice a year and usually books up very quickly. This last OCT 2020 session was a virtual course. I don't believe they have set the date yet for the next session. Two of my co-workers attended this last session and said the virtual course was just as effective and actually liked that they did not have to worry about traveling. The training was more readily approved for that same reason; much less cost to the company without the travel costs. This was the 2nd time one of the co-workers has attended. She liked the workshop so much when she attended about 5 years ago that she asked to attend again as a refresher and to see what was new.
Another option is to bring in an outside company (who offers EM program set up as a service to 3rd party customers) such as NQAC (Nestle owned in Dublin, Ohio), Merieux NutriSciences, etc... and have them come in and help you set up the program. Although you will need to pay for their initial site visit and proposal, you can be assured that it will be done correctly and that you will also receive proper education from them as well (that is specific to your facility) since this is their area of expertise.

Asking consultants and training for environmental monitoring has been quite tricky as most times they cannot answer your question except their on your site to develop a program for you; which in my opinion is a costly venture.
This document is specifically for the nuts industry. I'm in the spices and condiments industry and it helped me set up a program.
