Help needed - Air - Yeast and Mould plate count

Hi everyone, I think this has been asked a million times on this forum but I cant seem to find an answer. What would be an acceptable limit for Yeasts and Mould on air plates? This would be in a high risk production area making RTE food. Any help would be massively appreciated. Sam

There is a guidance document on the FSAI (Irish) website that outlines requirements for all different food products for different micro tests for RTE foods. I find it very helpful. There is EU Reg 2073 but can't remember if yeasts and moulds parameters are defined.

As noted Page 2, the bacterial data is primarily taken from the UK-HPA publication of 2009 except for the adjustments noted. Nonetheless GN3 includes useful additional Guidance comments and some further data on toxins.

 

Zero comments regarding Yeast (there are a few in the UK 2009 paper for certain food categories.).

Various suggestions (often product unidentified) exist on the forum and in the Literature. it may relate to the Product/process..

 

I assume you refer to sedimentation plate data (passive sampling). Active sampling methods are probably more "accurate".
