Chiller and Freezer Breakdown Procedures
Hello all,
I'm looking for some advice on my chill and freezer breakdown procedures.
We've recently implemented online monitoring sensors, which alarm after being out of defined limits for a set amount of time.
This delay time reflects the initial rise in temperature from hot product being placed in the chill or freezer.
However, I'm struggling with writing my procedure following an alarm being activated. I've started it with:
- inspecting the chill or freezer and determining whether the unit is running
- moving product to a working fridge/freezer
- call out of the refrigeration company.
However, could anyone please give me an insight into their own procedures and corrective actions in terms of disposal of product and limits of temperature and time that they would dispose of product?
What product your storing is key information here
You need to know a couple of things to make sound decisions
Product temp when the issue began (chill and frozen)
How long product takes to warm to the danger zone
Can you tag frozen product as "previously frozen" and have customers for it
My procedure also has a step to random check chilled/frozen goods temperatures to ensure no temperature abuse. A risk assessment of this temperature failure is also recommended depending on the nature of the goods :)
