Allergen risk assessment

Good Morning 

 

I recently was told by an auditor my allergen risk assessment was wrong with no explanation besides figure it out for myself. There audit non-conformance was "allergens associated with raw materials and finished products were not considered".

it was also used in my audit last year but there was no non-conformance raised, it was accepted. please can i have feedback on if its incorrect or if there is an example or template i can refer to. any help will be appreciated.

so what exactly does your risk assessment say?    The non conformance makes it sound like you have not considered allergens at all

Hey Verona. Your risk assessment doesn't indicate what particular allergens you have at your facility, in ingredients and in finished products.

What standard or scheme are you being audited under?  What is the wording of the clause you're not complying with? 

We add cheese in a salad that is already manufactured and butter in a ready to cook veg mix that is also already manufactured. we use sodium metabisulpite (also already manufactured) as a whitening agent. Those are the allergens present in our facility.

Please remember that the Intertek-FSA audit is a 2nd party supplier audit based on your company's terms of reference, e.g. SANS 10330 or what the case may be.

 

Not sure what your scope is, it might be fresh produce. I do get what you tried to accomplish with your risk assessment. A solution will be to list your raw materials, state that there are now allergens in the raw products (hopefully no soy :smile:) and indicate at e.g., the cheese and  butter the milk allergen. You may combine this with the final products, salad or veggies, where this will be added. The same with your other allergen. Include the likelihood and severity to indicate how you obtained your risk ratings. 

 

Also not sure if this is your complete PRP7.2 but you might need to revise it as process step 2 just indicated the cheese (product not process step) and the hazard is thus incorrectly indicated as "labelling and identification of cheese" which might actually be one of your control measures.

Well, offhand, the risk assessment is not meaningful as per Post 4.

So the auditor's comment is accurate.

Can see dozens of RA examples on this Forum.
