Analytical Testing for Frozen Samosas and Rolls
Hello everyone,
Just wandering what kind of analytical testing can be performed on frozen snack items like Samosas, Vegetable Rolls, or Meat Rolls, etc? I would appreciate if someone can share the processing guidelines for frozen snack manufacturing. I specifically wants to see the Process Flow or HACCP plan and finshed product analytical testing parameters. Our product is fully cooked/RTE/Blast Freezed/Packed in Aluminum Trays as bulk packaging for food service.

What does your hazard and risk analysis say on this topic? I am assuming you make these products yourselves? In that case I would expect the manufacturer to have a clear idea of what test plans to follow. Just a few short thoughts: Do you do any testing on pesticides, mycotoxins, heavy metals in the raw materials? Have you cvalidated the killstep(s) for pathogens? What about allergens?

Your flow chart should have all the process steps. Mixing > Settling> Deep Frying > Freezing etc. I am not familiar with your recipe. And then include how the CCP's are managed.
As far as testing, I would perform a routine microbial testing of APC, YM, EC/Coli, Salm, EB. You can also conduct a shelf life study.
Additionally, test for any other claims you are making - dairy/gluten free etc. to support them.
