Egg Cracking a CCP?

Hi All 

 

I work in a small bakery and we have an egg cracking machine with a built in sieve. I have recently reviewed the HACCP identifying physical risk of shells. However my question should this become a ccp? and two steps on the process flow or would it be classed as one?

 

I have attached a snapshot of the Hazard analysis and the process flow.

What is your threshold that you are measuring?

Is it just Pass / Fail?

Without being able to read the attachment, I'm going to say no, but the sieve itself needs to be identified for being intact at start and end of shift/batch

Yes I guess so, were checking there is no egg shell in the liquid egg or the sieve, but then there is the inspection of the Sieve to ensure its not damaged itself.

Thanks Scampi. After positing I realised the sieve inspection is more the CCP, so maybe my answers to the questions change as the next step is the sieve which will remove the egg shells!

 

I think I just needed to say it aloud/ type for the realisation!

Hi Laura, have a quick look through the attachment and see if that helps inform your decision- it helped me when considering something similar in citrus juice production

What's the severity of any harm from an egg shell?  That should help guide you in this decision.  Will it cause choking?  Will it cause dental damage?  Will it cause a cut?
