Continual Improvement In HACCP

Hello,
I have a problem here. This is the first time i am going to face the HACCP certified Reneewal Audit. All the while I only follow what should do during surveillance audit. In the last HACCP meeting, I had been told that the HACCP system should have a Continue Improvement which regards to Objective or CCP. Usually I just put the litter change in progress or upgrate of the equipment as continue improvement. Is that any body can explain to me what should I for the Continue Improvement?

I didnt really get with the Conim that you've mentioned. IMO, the Conim is occur on the every aspects of manufacturing activities. Those Conim will, directly or no, affecting the Hazard Analysis. So therefore, you need to review the HACCP Program. Even if no changing occurs, you should verify and review your HACCP Program in certain period. The output of the review may cause elimination or additional of CCP, or other important issues.

I think the "review" itself was the Conim of HACCP.

Continual improvement are the changes or progress made in your system for e.g. installation of new equipments which improves the efficiency of a process, training done to improve the effectiveness of a work, Changes in the design to achieve the food safety objectives etc…any changes made from the period after your last HACCP audit can be included under continual improvement.

The frequent problems or complaints you get, any internal audit findings, management reviews done can be overlooked to see if the results of the corrective and preventive actions have benefited if yes, add them under your CI list.
Great advice Jean. I would just add that it may be a good idea to set up a spreadsheet like an 'improvements log' - just put on it:

- date completed
- department
- responsible person
- what the issue was
- what was implemented
- cost of implementation
- what the benefit is
- any cost saving

Well something like that anyway. It is a good overview of continual improvement activity in the company overall and by department. Also the visibility can be a driver of further improvement and it is easy to demonstrate to auditors.

Thank you for you all. I get what you all means, that is exactly what i had done. I have Continue Improvement log sheet, i done all the review, I had change some logsheet to improve the progress. But they request more, like change in objective for the improvement. My question is can i reduce the CCP checking frequency due to 3 years consistent record?

Sorry if I got you wrong.

Do you mean if the CCP verification frequency can be reduced like for e.g. instead of verifying the CCP records every week, you require to do every 2 weeks once? If yes, then you can.

If you intend to reduce the number of CCP’s due to 3 years consistent record, then you can but you need to have a very good justification for your decision.

The objective in your food safety policy can also be changed depending upon your system performance, customer requirements, regulatory or international standards or any new emerging hazards etc.

Dear BeautyFoo,

IMO, the CCP is determined by the Hazard Analysis, Decision Tree or other tools that you may use. So, when the review time has come, you need to review the decision "why do I consider this step as CCP?" Even if it shows consistent records, but if you still worrying that this step will exceed the acceptable limit if not controlled, then I think it still a CCP.

Or... you may use the ISO 22k "approach", by changing the status of CCP into CP that controlled by oPRP. Nevertheless, as long as it need a specific control measure, IMO it still a significant hazard. And forgive me for my dunce, but I dont get the objective that yo've mentioned. Is it company objective? Dept. objective? Or Food Safety objective?

You can do hazard analysis again... according to your data you can change the probability (likelihood) and if posiible (depent on your policy about Probability X Hazard)) you can change your ccp to oprp...
I totally agree with AS NUR. If you feel the probability has changed (for whatever reason, new equipment, history etc) then it is possible for the score obtained from a risk assessment matrix will change and may cross the limit you have chosen as a CCP to become a non CCP / oPRP.

I agree with AsNur and Moo73steve. If you review your hazard analysis and if the probability is less due to the changes in your system then you can convert a CCP into a CP.
