I need more information regarding to freeze drying of fresh vegetables anfruits, benefits, market demand in the world, investment costs, applications in the world, etc.

Anyone got experience to share with ayşegül?
I've used IQF Technology for freezing cheese, but it is used extensively in freezing vegetables such as peas and beans.

It freezes each particle of food separately as it blows cold (usually -20 degrees) up through a perforated vibrating conveyor. the particles are then free flowing in the end packaging.

i think that the nutritional value of the food depends on the age of your raw material.

costs would be the cost of the IQF kit itself, and topping up of nitrogen.
If you do an internet search on IQF you might find out costings and applications there.

I think Aysegul was asking about freeze drying though which is more about freezing the item / food etc then removing the water at very low pressure to cause an aerated structure. I've seen it in coffee.

I don't think there is a call in the UK as an ingredient; however, there might be in snack foods. The CCFRA are good people to call about current technologies and for training courses.
