Blast Chill Validation and Verification Monitoring

I am requesting an expert in the field of cooling stabilization of various cooked products that is able to point out CCPs within a blast chiller and validate scientifically. After validation is complete, a verification program must be implemented for HACCP. Please advise or would some one forward to an expert in this field. Thank you.

aaahhhmmmmm....... Whatever about the validation of your blast chilling by an expert, it's up to you to determine CCPs via your hazard analysis and risk assessment. Unless I'm terribly mistaken, there are not going to be CCP's 'within' a blast chiller, the Blast chilling is a step in your process and you need to decide whether it is a CCP or not. ( there will be varying opinions on this but it will depend on the specifics of your process). 

 

You need to go back to the beginning and start at principle 1 of HACCP and then follow the 12 steps until you reach a completed HACCP plan. Validation and verification are principles 6 and 7.

 

We would need more information regarding your process to be able to advise any further I think...

The reason I need an expert for the blast is not to determine CCP for product (been done), but where to monitor and to validate the placement of the temp probes without having to probe every product.

Well one place would be worse case scenario hence the middle of the pallet or trolley. Also top and bottom ( to establish if there are any hot spots) and different positions within the blast chiller. Get yourself a couple of data loggers.

As per trubertq, a definitive answer to yr particular query probably relates to your specific product / process.

 

There are numerous types of blast chiller design / geometry / air flow / static-dynamic.

 

As per Caz, You will need to evaluate the detailed temperature distribution / worst case for the particular system unless the  cooling capacity is well over the process thermal loading requirements as determined by the  temperature-time critical limits.

We have a blast freezer CCP.  We did a blast freezer study to document which position on cart was the warmest.  This is the area where we monitor the temp.  (Actually we use the 2 warmest areas/cart of about 250 products)  We monitor those two spots on every cart all day.  By using this study we can prove we monitor the warmest areas and the rest of the products will also be good.  We verify by having a supervisor watch the person temping and also log the temps for that cart.  This is verification is done once per shift.

This is request from regulators. We have done extensive work to determine hot zones and do monitor them. However, each load in each blast cell differs by size, shape, and formula each time and is difficult to determine worst case scenario. I really need someone who has done this type of validation before to guide at least a starting point. How many temp probes? How many reps? and so forth

I do realize the variables involved here. What I need is someone who is an expert or who has completed this type of validation to come on site to assist in this process. Please advise.
