Proper Uniform for Confectionary Candy Processing?

What is the proper uniform for a batch making position? Is the standard lab coat without pockets and buttons ok? Also does the color have to be white? It would be for Confectionary candy processing.

I would say white, since it shows any dirt and grime. You want that person to be very clean. Lab coat with no pockets, snaps to close would probably be ideal.
