What webinar topics would you like to see in 2017?

As you know the Food Safety Fridays Webinars have been rolling for a couple of years now and over this time we've delivered 70 free educational webinars to our members from all over the world.  

 

Currently we're putting the program together for 2017 and at this time we'd like some input from members on what topics you'd like to see. Perhaps areas we haven't previously covered or an element of food safety management that you need help with.

 

We want to bring you another great program next year and we want you to shape it.

  • Root Cause Analysis
  • Training employees on food safety and quality
  • Internal Auditing
  • Certifying a Product as Organic/Halal/Kosher/non-GMO/etc.
  • Auditing Raw Material Suppliers

I would like more training on Food Packaging - what makes it food-grade, typical Food Safety Plans, auditing a Food Packaging Manufacturer, and any other hot topics.

Organic certification

 

Conducting internal audits

 

environmental monitoring and in house pathogen testing

I'd like to see webinars (especially in finding ways to maintain the systems, i.e. monitoring, effectiveness checks, etc. when staffing is limited)

  • Vendor Qualification/Approval
  • Management of Change
  • Deviations, investigations, corrective actions

 

First of all thanks a lot for providing continuous learning tools to us. Some ideas from my side are:

 

1) Unannounced audits

2) Back to basics: golden points to remember in food processing industries 

3) Good Agricultural Practices (GAP) audits 

4) Organic food certification

5) Recent trends in colours and flavors

  • TACCP (Food defence) - key aspects
  • VACCP (Food fraud) - key aspects
  • Strategies and plans for building a strong Food Safety Culture and its evaluation
  • BRC standards - key aspects
  • Risk based microbiological testing plans for verification of FSMS

The kinds of topics I would like to learn more about are: 

  • TACCP - what documentation should you have? 
  • How to deal with audit non-conformances that you or the Company simply cannot address
  • Allergen policies to the customer - what you are responsible for, what you are not.

Thank you for all your hard work in helping everyone around the world grow and improve in the Food Safety arena.

 

One recommendation would be to have real case study experiences related to the topics discussed.  For example, in HACCP/Preventive Controls, showing real life situations in industry with real solutions.  Much time is spent on foundation learning, rules, etc...  Maybe examples from common industries as well as some outlying industries.  Examples from Organic processing as well as synthetic/chemicals processing into food.

As far as I know and from the Food Defense point of view, CARVER+Shock software is not recommended anymore by FDA for focussed risk assessment. It would be interesting to clarified -step by step- the best way to do the job now.

Recently I have been given the responsibility to oversee the QA and SQF programs at an inline grading facility along with my job in an egg breaking facility. Coming from a food processing background, it seems that the grading facility standards are much lower than the expectations for any other food processing. It's my goal to change this, but I realize this is culture shock to those in the egg grading business and there are some things that just won't be treated the same.I would like to see:

  • How the FSMA requirements for Environmental Monitoring specifically affects a shell egg grading facility. What would a reasonable expectation be?
  • How to get a team to buy in to root cause analysis

  • Liability for proven and unproven contamination
  • Customer service, addressing complaints and resolving complaints with potential for illness or litigation from the QA side, not necessarily the business side
  • Prioritization of plant structural improvements and strategies
  • A rap session on answering consumer skepticism, e.g. how to share confidence in your food safety system with customers and consumers
  • Bringing food safety beyond food: specifics of auditing packaging and DPC material suppliers
  • Packaging and label printing technology educational overview, help QA understand the process and technology so we can audit better
  • "Red" ingredients, education on why consumers don't like particular additives, etc. so that we hear a perspective other than the FDA/industry one and can empathize
  • Walkthrough of process of responding to an FDA warning letter or 483.

How to introduce "shake ups" into your long standing inspections/procedures.

 

Get good audit grade, micro is going well=get complacent. How do you get staff to think about the system differently and question long-standing procedures that appear to be working in order to further improve? Most of us do this as new hires, but how do you get that same viewpoint 5 years later when all the procedures are yours?

Good call Earth 20, keeping the momentum going, reinvigorating, refreshing, continual improvement etc.
