Vegan and Gluten-free breakfast

i  am new in the Food industry 

I'm in a position of a B-tech Degree in Food Technology.

i'm joining a new Company they have given me a task to do a research and compile a recipe  for healthy Raps, Salads and Breakfast.

Can you please help me Compile a Vegan and gluten-free Breakfast recipe.

I'm more experienced on systems i've now taken a new journey i'm more on to Wellness (health).
