About Me
I am a food safety trainer and consultant based in Wexford Town in the South-East of Ireland.
My clients are small retail, catering and small-scale food production businesses. I offer food safety training on three levels across the South-East of Ireland: Essential Food Safety, Basic Food Hygiene and Managing Food Safety.
I also offer advice with HACCP and food safety management and provide verification services (audits) for existing HACCP systems.
My areas of interest are: Food safety as it applies to small and medium-scale food businesses in Ireland (and in the whole of Europe), mainly in the retail and catering sectors. I am also interested in food microbiology and all related fields.
I am currently working on a Handbook: Managing Food Safety for food safety managers in retail, wholesale and catering businesses. The first volume: Managing Food Hygiene was published in 2010. A second volume: HACCP is expected for mid-2012.
