Food Defence – Protecting Food from Intentional Contamination is a practical 4-hour online training webinar designed for food safety, quality, and operations professionals responsible for protecting food products from intentional harm.
In today’s interconnected supply chains, risks such as sabotage, terrorism, malicious insiders, activism, and cyber disruption are real and evolving. GFSI-recognised certification schemes including FSSC 22000, BRCGS, IFS, SQF, and GlobalG.A.P. require structured food defence programmes. This training provides clear, step-by-step guidance on implementing and maintaining an effective food defence plan aligned with regulatory and certification expectations.
In the first part of the training, participants will gain an understanding of the modern threat landscape, including historical incidents, emerging geopolitical and cyber risks, insider threats, and the impact of globalisation on food defence vulnerabilities.
The second part covers certification and regulatory requirements, including FDA (IA Rule, Food Defense Plan Builder), EU expectations, PAS 96 guidance, and GFSI scheme requirements. Participants will understand how food defence differs from food fraud and food safety, and the types of intentional contamination risks organisations must consider.
The practical section focuses on conducting Threat and Vulnerability Assessments (TVA) using tools such as CARVER+Shock, FMEA, PAS 96, and FDA FDPB. The course also explores modern digital approaches including surveillance systems, access control, biometrics, and AI-driven monitoring of production anomalies and employee movement.
The final section covers implementation and continuous improvement, including developing and validating mitigation plans, conducting simulations, setting KPIs, integrating food defence into business continuity and crisis management, and preparing evidence for certification audits. Real industry case studies demonstrate how to apply food defence principles in practice.
