We currently use cheese cloth in the manufacture of one of our cheeses. This product is manufactured to USP-NF standards for non sterile medical grade gauze. The company has been excellent in providing as much documentation but can not / will not guarantee that it is allergen free.  My thought was to have each lot tested  by an accredited out side lab for the top 8 allergens prior to it being used. Does anyone see a flaw in this line of thinking? The product is by far superior to anything else we have tried and 1/2 the cost.

If your concerned with the cloth being exposed to allergens before getting to your facility then think testing will verify that it is allergen free.

Kindly visit the cloth vender to crosscheck the possibility of the allergen. Take the coc from vender and an external laboratory certificate for the test of traces.

Vender have to claim product is allergensfree.
