What specifically are you asking?  Depends on your meat type and where you are shipping it to

I have been using endotoxin testing in  my "former life". It is required for e.g. implants (medical devices) or some pharmaceuticals (e.g. injectabilia), i.e. if the applicants overcomes the first level of defense in human body by "connecting" to the blood systems. Endotoxins can cause fever.

In food industry I have never heard about it and I cannot imagine any necessity, at least no direct.

Or do we talk about enterotoxins?

Yes, I am bit confused, because we are using some raw materials that are particularly used in Biopharmaceuticals, not traditionally used in food. Some materials are produced using rDNA technology in E. coli as host. So, there is possibility of having endotoxin in raw materials. I have worked with food for past 5-6 years, and didn't face any requirement regarding endotoxin testing in the final product or in raw materials. However, as per USP or Eu. ph. as per the monograph of the subjected raw materials need to have acceptable limit of endotoxin. Now, I am trying to be clear, if it is really required to care of in case of food production.
