Shelf Life Study Rejected by CFIA – What Are the Best Practices?

Hi Folks,

recently we had an audit with CFIA with the concern of shelf life study. what we did was to test the product at the end of BBD and do a sensory check after opening the product. but the inspector did not accept this procedure. Can some of you advise on what you do in your companies? i appreciate that. 

PS. we make RTE fish product.

You need to send your finished goods to a lab for a "shelf life study"

 

the lab puts your product into an enclosed space that replicates storage conditions (which can be done on an accelerated plan), they remove it on a set schedule for organoleptic AND micro/Y&M sampling 

 

Sensory in house is NOT sufficient, particularly for your product

Scampi is right. RTE FISH has a whole plethora of issues
