Creating a HACCP Plan for a Self-Service Restaurant

Hi,

 

I'm taking a course for HACCP and one of the questions i have been set is:

 

"Create a HACCP plan for a self service restaurant which has a well known dish. The dish is called Bitoque (portuguese dish)"

 

However i have tried to create a plan but i'm getting my self very confused as what to do. Can any one help me?

what did you already do and where did you get stuck?

 

Do you use the 12 steps?
