Final Rinse For Bell Peppers, is this step a CCP?

Hello,

 

Just revising my HACCP program and came across the final rinse.

 

My question is, would you consider this step a CCP ?

 

I've been through a few audits and its never been a problem but as I'm researching its being considered a CCP.

 

 

Also, if you do consider it a CCP, what type of chlorine monitoring would you think I should conduct?

If you rely on the rinse to eliminate pathogens from your raw product and make it RTE, absolutely it would be a CCP.
