I am from a bakery manufacturing company, i would like to know how to address and take the action on food allergens start from manufacturing processes especially food contamination? Is this food allergens has been legally imposed by Malaysia Health Ministry?

I don't have an idea if allergenis implemented in Malayasia. However if you are talking controlling allergen in the manufacturing process only you need to consider planning and Scheduling. This are some of the simple steps how to do it:

1. List down all the ingredients and flavors (if there is) and check its allergen content.
example:
product peanut Treanut Sesame Milk Fish Egg gluten Lactose
buns No no yes yes yes yes Yes
Loft no no no yes yes yes yes
Diet no no no no no no no
2. from the list you can determine which product to produce first to avoid contamination. Normally we produce with non allergen product- to allergen product to category 1 allergen product. in

3. You need to consider product with thesame allergen contect to minimized cleaning.

If your scheduling had been followed the only difficult part in this is cleaning from allergic product to non or less allergic product.

For Malaysia, please refer to FOOD (AMENDMENT) (No. 2) REGULATIONS 2009.
Allergens are cited as "food contains an ingredient known to cause
hypersensitivity".
This amendment to the regulations is effective 1 Jan 2010.
You may download the amendment with an implementation guideline from the Ministry of Health FSQ website.

3. returned back to all none removable parts and start wiping all the prts ensuring the all sticky debris had been removed.
4. Using sanitizer start spraying and wiping all the none removable parts do thesma with the removed parts before installing back.

For Category one allergen (peanut, tree nut etc.)

Follow the same procedure but this time the removable parts need to be wet/ chemical clean.
