Typically this is trending using some sort of statistical analysis. It is going to vary greatly depending on what you are verifying. It is meant to be a means to indicate any sort of spikes in trends.

We had an auditor in the other week that shared some good information on trending data for pest control. It not only includes comparing month to month but year to year. You already know insect activity goes up when it is warm and down when it is cold but can you narrow down the month, week, day that you might want to "change" your practices? He was in a warehouse once that was impacted by the migration of certain birds each year and was able to adjust his system to improve its impact while reducing his cost.

I can't tell you what you want to analyze because I don't know your process. You may start out analyzing to much but eventually you will figure out what impacts your process and what you need to watch.
