Hi All,

I'm looking for RTE and RTC micro standards for a meat replacement product at beginning and end of life for Tesco/MS/JS etc



Cananyone help?

Guidance from CFA may be useful but expect the retailers to be more stringent.

Found some typical specs:
Fresh Meat Equivalent

Tests Target
Total Viable Count <10,000/g
Coliforms <100/g
S.Aureus (Coagulase +Ve) < 100/g
Salmonella Sp. In 25g NotDetected
VTEC E.Coli In 25g NotDetected

Cooked Meat Equivalent
Tests Target
Total Viable Count < 100/g
Clostridia Sp. <10/g
Coliforms < 10/g
E. Coli < 10/g
S.Aureus (Coagulase +Ve) < 20/g
Listeria Sp. In 25g Not Detected
Salmonella Sp. In 25g Not Detected

Thanks Tony,

I am going to use the CFA guidelines but as I am now woring for a Branded supplier that may look at going own brand for some of the majors wanted to make sure I put tough enough controls in from the start.
