I need help. FSIS notice 74-13 basically says that all prerequisites are to be reviewed during preshipment sign off. In the past we review our prerequisites, ie tempering records, change over sheets, allergen sheets, CCP cook records and metal detection records when they have been completed. After the product has been packaged we will sign off in the preshipment book. Now they want you to review all the documentes at the time you are signing the preshipment book. Some of the documents are from the fresh meat room and we do not want those records in the cook side office. So this makes it hard to review all the documents during sign off. Has anyone else had to deal with this. Some productions can take up to 3 days from fresh meat room to cook room and in the package. We run about 20-30 items a day and all the prerequisite documents get reviewed and this is documented on the sheet itself. I need some ideas on how we can review the prerequisites without having all the documents in hand during sign off. Any ideas will help. Thanks and have a great day.
