Hello,

 

I would like to ask about a HACCP packaging of fresh produces (fresh peas).Do I have to include in the plan also the definition of the terms related to HACCP??To describe the product?How has to be a risk analysis for the packaging process of the peas?

You should use a risk management approach. You can use as reference the ISO 31000 standard

Dear Dina,

 

It likely depends on the intended use of yr haccp plan, eg conforming to which standard or audit requirements. Plus any local FS legislatory requirements.

 

Most plans are mainly based on Codex / NACMCF whose respective requirements have been publishedand linked on this forum.

Typical answers (eg see Codex) to yr 3 queries are - defined by the standard/reference,Yes, optional but often with minimal requirements defined by the standard/reference
