Could someone, please, send me complete set of document or HACCP manual for small bakeries. It makes bread, cakes, cookies and puffs.

Unfortunately it depends on the details of your processes and possibly the intended usage.

 

If you are seeking a generic set of principles I suggest you consult the Codex Food Hygiene document / haccp section

Yes, that is why I suggested you check "Codex".

 

Not sure if you are familiar with HACCP but "food hygiene" is an important Prerequisite topic.

I am familiar with HACCP and know about food hygiene implementation. I just needed a set doc for reference.

Barrie, I agree with you.

 

Even if we could provide such a thing, it may not be what they really needed as the term HACCP can be so mis-used.  I have often heard people call the entire food safety system called a HACCP system, which it is but it isn't. So do they need the actual plan, all of the prerequisite systems, including SOP's.
