I am in the middle of an reassusse my Raw Ground HACCP Plan.  I notice that some of the product was not on the list of Product Description.  Do we need to list all of our product by there name. For Ex. We do Ground Beef if I put bacon in it do I need to list it as Ground Beef and Bacon. Also do I need to list all of the ingredient that we used.

you cannot control what you do not list, so yes, everything must be on the list

Perhaps USDA have a specific requirement in which case no choice ?

If otherwise IMEX the choice is (haccp) flexible depending on yr actual product list. The choice often  relates to the actual haccp plan array.

For example i have a plan for frozen raw batterfried farmed tiger shrimp meat where one plan is specific to one species/origin/presentation.

I also have a plan for frozen raw batterfried shrimp meat where one plan covers a range of shrimp species. The range of species is detailed by a cross-referenced list. The detailed  ingredients are specified in a preliminary intro. to the hazard plan itself with respect to the hazards of raw materials.

Kind Regards,
