Dear All,

 

I have a reasonably short time to develop a template to review in full and in detail a HACCP system for a hotel catering and bar operation. Ideally such a template needs to be scored as it will be used over several sites so they can compete against each other.

 

I am thinking of using the Codex Headings as a possible guide to sections / splitting up the audit.

 

If anyone has anything they might be willing to share it would be most helpful to me and will certainly speed up this task!

Hi Tim,

 

HACCP "audit" as in yr thread title  is potentially dissimilar to HACCP "review". 

 

I assume the latter is yr primary objective. Accordingly, have a look at these vaguely analogous requests  -

Q. When my HACCP plan is complete do I ever need to review it?

Your HACCP plan must be kept up to date. You will need to review it from time to time, especially whenever something in your food operation changes, for example, if you decide to start hot holding food you will need to update your plan to include this additional step.

 

 

As you can see, reader's interpretations of "review" were varied, including, i suspect, those of the OPs also. :smile:

 

I  anticipate you are looking for a checklist to tick off the successful implementation of the various components of a Codex HACCP Plan . if so this is contained within most FS checklists posted on this forum under the section headed "HACCP plan".

 

Please confirm so that some examples can be directed towards you. if otherwise, pls explain a little as to yr actual objective .

Many thanks for your reply.

 

Essentially the idea behind what I have been asked to do is to review the already existing HACCP that each site has to ensure that it is a credible system and is based on all of the HACCP Principles - essentially to give them a third party review / reassurance that what they have, if followed, is credible and actually works.

 

This would entail looking at how they have got to where they are currently and examining any faults in that process, how they gone about developing CCP's, monitoring and verification, plus establishing if what they say they are doing in practice actually is what they are doing in reality.
